Thankfulness - Day Two

Well, it's day two.  And I'm feeling more thankful by the second... Today, I am thankful for my crock pot.

It's trustworthy and warm.  It's dependable.  You know, all the things I look for in a man cooking device.

This morning (in the wee hours) I put together a recipe.  The whole rest of the day, I didn't think about it again!  Again, an attribute I look for in a man cooking device.

Tonight, we are enjoying some "Unbelievably Simple Brisket."  Thank you, Crock Pot.  Thank you for allowing for a stress-free dinner at the Newingham's.  (Despite the fact that we practically had to eat in our bedroom... You saw the pictures from yesterday, right?!)

It was yummy and stress-free!  So thankful for that old trusty crock pot.

(Please don't comment on its stains, etc.  My mother is buying me a new crock pot for Christmas.  Super excited.  Thank you.  Over and out.)



Unbelievably Simple Brisket

4-5 pounds fresh beef brisket

1 envelope dry onion soup mix

1 can (4 ounces) mushrooms, with liquid

Trim all excess fat from meat.  Combine soup mix with mushroom and mushroom liquid.  Place meat in greased 4.5 to 6-quart slow cooker, cutting to fit if necessary.  Spread onion soup mixture over brisket, moistening well.  Cover and cook on low heat for 10-14 hours.  Remove meat and cut across the grain into thin slices.  Serve with meat juices poured over top of slices.  Makes 6-8 servings.
